DUCK
Venison America evaluated duck growers for a very long time before selecting those that we felt were the best. We demand consistency in product so that we can unconditionally guarantee what we sell to our customers. This was no easy task when it came to selecting our duck growers.
We routinely carry both Moulad and Muscovy ducks because they have proven over time to be the best in terms of flavor and value. Pekin is another popular duck and is readily available on request.
Duck is comprised entirely of dark meat, which means that there is little difference between the flavor and texture of the various parts of the bird. Each breed of duck has its own characteristics with regard to size, tenderness and flavor.
MUSCOVY DUCK is the largest of the breeds we recommend. This bird has a large breast, is very lean and has a flavor profile that carries a hint of hickory nut combined with a nice firm even texture. This is our favorite because it is healthy and delicious. A 3.5 oz. Serving yields 19 grams of protein, only 14 grams of fat and about 200 calories. (Approximate figures)
MOULARD DUCK is a cross between a Pekin and Muscovy. This duck is raised primarily for the production of Foie Gras (gourmet duck liver) and produces a succulent breast that is great grilled or smoked. Because of the feeding procedures required to produce Foie Gras the breast meet of this duck is considerably richer with fats. This is why it is a perfect grill option because it does not dry out as quickly as other breeds when grilled.
PEKIN DUCKS are a large white breed of domestic ducks which were bred for meat and eggs. We hesitate to tell you this but Donald Duck was a Pekin Duck. Now don’t be queasy about trying this delicious duck which is served in many of the finest restaurants throughout the world. Our Pekin Ducks are raised here in the upper Midwest and are some of the finest we have every seen. These ducks have an exceptional yield of meat to caracus weight. They have a rich distinctive flavor which is not overwhelming and lends itself to many flavorful sauces or accompaniments.
