VENISON
Venison America was founded by several Fallow Deer farmers who were dedicated to producing the best Fallow Venison in the country. We didnt realize how special this group of individuals was until we started doing business with other domestic farmers who proved to not be nearly as interested in product quality or customer service.
We still buy our Fallow Venison Products from one of the original founders of Venison America. Fallow deer is wonderful. It is often referred to as the veal of venison. This is an accurate statement because Fallow Venison is light in color, fine textured and very mild in flavor. Its flavor is very similar to Veal but a bit more distinctive.
As with Elk, Venison America has gone to New Zealand to procure our other Venison Products. (Please see Elk page for details.) New Zealand Venison is a Red Deer that is raised as a free-range animal. New Zealand Venison is often called Cervena and is marketed throughout the world. It is a major export product for New Zealand and is tightly controlled to insure healthy and humane treatment of the animals, sanitary processing and consistent quality of those important attributes of size, tenderness and flavor.
New Zealand Venison has a distinctive Venison flavor, sometimes missing in our farm raised domestic animals, but is not as overwhelming as wild White Tail or Mule Deer. All products are nicely trimmed and Chef Ready. All cuts are well suited for either restaurant or home use.
