Complimentary Recipe – Blue Cheese Steak

Blue Cheese Steak:
4 Custom Cut New York or Ribeye Beef Steaks (Cut 11/2 - 2 inches thick)

Ingredients:
Steaks
4 oz. Crumbled Blue Cheese
1/4 Cup Green Onions with tops; chopped
2 Tablespoons Olive Oil
1 Tablespoon Cracked Pepper
1 Tablespoon Sea Salt
2 Tablespoons minced Garlic

Preparing the Steaks:
Remove excess fat from edge of steaks and discard
Rub both sides of steaks with Olive Oil
Do Not salt or pepper at this time
Steaks are now ready to grill

Preparing the Cheese:
Gently mix Blue Cheese, Onions, Garlic, Salt and Pepper in a small bowl
Refrigerate until time to sprinkle on steaks

Grilling and Serving:
Preheat grill to High in preparation of searing on both sides.
Sear steaks on each side for 1 minute
Reduce Heat to Medium-High and continue cooking for 5 minutes
Turn Steaks
Sprinkle each steak with Cheese mixture and cook for another 5 minutes for Medium Rare

Remove steaks from grill to a heated platter and serve immediately.
We like a nice Pinot Nior chilled to about 70 degrees F before and during this dinner.
This entrée also is great with Pasta and olive oil. We especially like linguine noodles with olive oil and cracked pepper.
