Complimentary Recipe – Wild Boar Ham

Venison America wild Boar/Feral Swine is raised right here in Wisconsin on a farm in the Mississippi River valley complex. These Boars love their free range in the fields and woods almost as much as the corn grown on their farm. These animals are delicious.

Custom cutting at a modern USDA inspected facility insures a beautiful and healthy presentation. Our Hams or boned, custom cut and smoked to bring out the delicate flavor of the meat. Each ham is tied and weighs 5 – 6 pounds each.

Ingredients:
1 Wild Boar ham
1/2 cup apple juice (Fresh cider is best)
3 large Jonathan apples
2 cloves Garlic peeled, smashed and diced
2 tablespoons dark Brown Sugar
1 teaspoon each fresh cracked Pepper and Sea Salt
1/2 teaspoon lemon juice

Preparation:

Bring ham to near room temperature prior to baking

Mix remaining ingredients in a small saucepan, bring to a boil, reduce heat and simmer for 5 minutes.

Place ham in covered roaster.

Peel, core and slice apples into quarters. Add apples to roaster around and on top of ham.

Pour flavor-enhancing liquid over ham, cover and bake in preheated over at 300 F for 2 1/2 hours. Baste ham using a basting bulb at least twice during the cooking process.

Remove ham from roaster to a warm platter.

Pour liquid from roaster into saucepan and bring to a boil. Dilute 2 teaspoons corn starch in cold water and add to boiling mixture. Boil for 1 minute. Serve on the side or poured over ham before slicing.
