Chili is one of the world’s most popular dishes with virtually thousands upon thousands of recipes available. It is a real heart warming dish and is a signature item for many successful restaurants throughout the world. This recipe is simple and delicious. We have had it with a variety of meats but like it best with elk.


Ground Elk or Venison:

Custom ground elk or venison from Venison America is perfect for this dish. This meat is made from only 98% lean meat and is ground to our exacting specifications to ensure the best flavor. 


Recipe below will produce 5 nice size servings.


Ingredients:

1 pound Custom ground Elk or Venison
4 tablespoons Olive oil
1 medium white onion, chopped
1 medium red bell pepper, diced to about 1/4 inch
1 medium green bell pepper, diced to about 1/4 inch
1 small dried red chili, crushed
1 tablespoon chili powder
1 teaspoon unsweetened cocoa powder
1 tablespoon dark brown sugar
1 teaspoon salt
3/4 teaspoon cinnamon
1/2 teaspoon fresh cracked pepper
1 (28-32 oz.) can whole tomatoes, chopped, including juice


Preparation:

Heat oil in large heavy pan over medium-high heat until hot.

Place chopped onion in pan and sauté until slightly golden, about 8 minutes.

Add bell peppers and sauté until tender, about 6 minutes.

Add chili powder, cocoa, salt, pepper and cinnamon. Cook about 2 minutes stirring constantly.

Add ground Elk cooking until no longer pink. (about 8 minutes)

Add tomatoes with juice, brown sugar and red chili. Simmer, uncovered, stirring frequently, for about 10 minutes.

Reduce heat to low and cook for another hour.
