Complimentary Recipe – Elk Chops

Elk Chops:

4 custom cut Elk Chops approx. 10 oz. each. Venison America Elk Chops are a truly unique cut. Custom cutting to our specifications ensure a well-trimmed chop and a beautiful presentation when served.


Marinade:

2 tablespoons fresh Rosemary leaves

2 cloves Garlic peeled, smashed and diced

1/2 cup Olive Oil


Place above ingredients in a large Ziploc bag. Add the Elk chops, seal and rotate bag several times to coat meat. Marinate in refrigerator a minimum of 4 hours. Remove from refrigerator at 30 minutes before grilling.


Glaze:

1/4 cup Pumpkin Ginger Mustarda

1-tablespoon light Brown Sugar

2 tablespoons brandy


Microwave 1/4 cup Mustarda until warm and free flowing. Blend in sugar and brandy. Microwave on medium for 2 minutes. Stir. Repeat process until sugar is dissolved.


Drizzle warm glaze over chops just prior to serving.


Grilling:

Remove chops from marinade and cook over medium-high heat grill. Discard marinade. Cook 3-4 minutes per side for a perfect medium-rare. (Rare – Red center and squishy to the touch; Medium Rare- Reddish-pink center and soft to the touch; Medium – Pink center and somewhat firm to the touch. Touch by pressing meat with flat of tongs or meat fork.) 


Note: Do not cook beyond medium or meat will be very tough.
